Traditional ingredients

The cuisine of the Dolomites people is historically influenced by the availability of traditional ingredients and typical products. The numerous huts, farmhouses and restaurants of Falcade and of the whole Biois Valley welcome they Guests and bring them back to the past, with tastes and flavors that recall traditional ingredients: barley and milk.

Nowadays the products that characterize the valley are – for sure – polenta, cheeses and “pastim”, a mixture of finely minced and very spicy meat whose origin is lost in the mists of time.

From “casunziei co le erbe ” (stuffed ravioli) to “formài frit ” (fried cheese), from “menèstra da orz” (barley soup) to “tocà da boia” (polenta and pastim), it’s always the right time to enjoy the typical dishes of the Agordo area. Among its the typical sweets, “carfogn” are certainly a historical and cultural symbol of the Biois Valley. They consist of fried ravioli filled with dry biscuits and chocolate, served with the always-popular glass of local grappa and poppy seeds that once came from local crops.

Speaking of cuisine and tradition, you cannot miss a visit to one of the oldest dairies in the Dolomites, Feder’s dairy. The Feder’s Dairy Museum is located in the municipality of Canale d’Agordo. It consists of an exhibition space of great historical and cultural value especially for children, who will have the opportunity to see with their own eyes the original equipment once used to work milk.
